if three players go all in and the player with the fewest chips wins do the other players just take their chips out?

Hi schevyman, and welcome to the board.

If 3 players go allin and the winner is the short stack, then two pots are created - a main pot and a side pot. The main pot is contested by all three players and in this case won by the short stack. It will therefore be 3x the shortstack's chips.

The side pot will, in this case be the difference between the short stack and the second players stack because the chipleader can't really go allin ( if he does and is called then his surplus chips are returned to him).

The sidepot is then contested between in this case the chipleader and second place stack. If the chipleader wins then second stack is knocked out, if not he probably loses his chiplead.
